Initially surprising for its sweetness, Surathi Mitha Kebab was a favourite of Rabindranath Tagore as noted in Pragya Sundari Devi’s writings. Chicken – 1 kg, cut into 8 pieces
Raisins – 50 g
Saffron – 1 pinch
Milk – a little (for soaking saffron)
Ghee – 3 tablespoons
Almonds – 50 g, sliced
Sugar – 200 g
Salt – to taste
Water – 1 glass
1.Recipe steps: Soak the saffron in a little milk and set aside.
1.Heat ghee in a skillet.
1.Add the chicken pieces and fry well.
1.Add salt to taste and mix thoroughly.
1.Add sugar and continue cooking, coating the chicken well on all sides.
1.Add the raisins and almond slivers.
1.Pour in a glass of water and let it cook.
1.Once it begins to boil, add the saffron-infused milk.
1.Continue cooking until the gravy thickens.
1.Remove from heat and garnish with almond slivers before serving.
